This recipe is one of my all-time favorites and definitely a staple in our household! As someone who loves something sweet with her coffee, this is my go-to breakfast.
Ingredients:
2 Large Ripe Bananas
⅓ cup natural peanut butter (I love Trader Joe's, it is only one ingredient - peanuts!)
2 eggs
¼ cup of honey
2 cups almond flour
1 tsp. cinnamon
1 tsp. baking soda
*½ cup chocolate chips if you're feeling a little extra*
Directions:
1. Preheat oven to 350. Line 12 muffin tins.
2. In a mixer (or using a hand mixer), beat bananas, peanut butter, eggs, and honey until well combined. *You can mash the bananas prior but I like to just throw it all in.
3. Add almond flour and mix till combined. Add cinnamon and baking soda, mix till combined.
4. Using a spoon or spatula, mix in chocolate chips.
5. Using a large cookie scoop or ¼ cup, fill muffin tins about ¾ of the way full.
6. Bake for about 15 to 20 minutes or until a toothpick comes out clean. Remove from pan, let cool, and enjoy!
