Breakfast: Spicy Egg + Cheese Bites

These little egg + cheese bites can be made SO many different ways! Customize them to your liking by adding ham, bacon, veggies, multiple cheeses, whatever your little heart desires!


Ingredients:


8 eggs

¼ cup of milk + an extra splash, about a tablespoon

¼ cup of shredded cheese (or more), I used cheddar but you can use whatever you have/like

A few splashes of hot sauce (I used Frank's Red)

Salt + Pepper


Directions:


1. Preheat oven to 350


2. Thoroughly spray muffin tins and set aside. (A silicone muffin pan would probably be your best bet! Just make sure it is made for baking.)


3. Add all ingredients into a mixing bowl and mix till well combined.


4. Use a ¼ cup to fill 12 muffin tins.


5. Bake for 25 minutes or until muffins are set. *I found it best to check them at about 15 minutes and poke them with a knife to let some of the air out.


6. Immediately after taking egg bites out of the oven, run a knife around the edges to break them free of the pan. *I did this twice. Once right out of the oven and a second time before I took them out of the pan.


7. Let cool and enjoy! Or, package them to be eaten throughout the week!
