Almond Flour "Scones": Peanut Butter Chocolate Chip

*Wow! It has been wayyyyy too long since my last post - I need to work on that my friends!*


I absolutely love anything with peanut butter and chocolate. If you're like me, you MUST try the healthy peanut butter bars from Erin Lives Whole. AMAZING.


Anyways, as we stay home during this time, I have been eager to experiment with cooking and baking. More so baking lately. I love trying out recipes that utilize healthy ingredients and are free of refined sugars. This way I can eat more and still feel good about what I am putting in my body.



Today I attempted Peanut Butter Chocolate Chip scones and was so impressed with how they came out! They are almost like a peanut butter chocolate chip cookie, but in scone form. SCORE!


Here's what you will need: Almond Flour, Baking Soda, Salt, Eggs, Peanut Butter, Honey, Chocolate Chips. Super simple, right?

Couple of things to keep in mind:

  • The texture of these "scones" is more like a fluffy cookie.

  • If your dough isn't coming together, add a teaspoon of almond milk (or any other milk) at a time until it comes together. It will be somewhat sticky.

  • If your dough is tooooo sticky, add a little more almond flour and mix well.

  • If you want your scones a bit on the sweeter side, add more honey.

  • Don't be afraid to try different add-ins! If you try something new, let me know how it goes!

Almond Flour "Scones": Peanut Butter Chocolate Chip


Dry ingredients:

2 1/4 cup Almond Flour

1 tsp. baking soda

1/4 tsp. salt (omit if your peanut butter is salted)

1/2 cup chocolate chips (or more if your heart desires)


Wet ingredients:

2 eggs

1/2 cup peanut butter

2-4 tbs of honey (depending on how sweet you want it, I do not like baked goods too sweet so I added 2 tbs.)


Directions:


1. Preheat oven to 350. Line a baking sheet with parchment paper (no parchment paper, no problem - I was out so I sprayed some coconut oil on the pan and it worked like a charm).


2. Mix dry ingredients - almond flour, baking soda, salt, chocolate chips.


3. In a different bowl, mix wet ingredients until well combined - eggs, peanut butter, honey.


4. Add your egg, peanut butter, honey mixture to your dry ingredients. Mix with a spoon and then with your hands if needed. If your mixture is too wet, add more almond flour. If your mixture is too dry, add a tiny bit of almond milk (or whatever milk you have).


5. Take your mixture out of the bowl. (It should be well combined, like a slightly sticky dough ball that you can still handle without getting super frustrated that it's all over your fingers.) Place it on a cutting board and shape it into about an 8-inch circle.


6. Cut the circle into eight pieces by slicing down the middle horizontally, down the middle vertically, and then diagonal from the right, and diagonal from the left.


7. Place your little slices on your prepared baking sheet on by one. Bake for 12-15 minutes or until golden brown. Let cool and enjoy!
