Hey, Hey, Hey!
One of my goals this year is to make a menu for our dinners during the week and STICK TO IT (that's the big part). I am happy to share that for the last two weeks, we have done so good. As we were prepping for the upcoming week, I came up with a few tips that have helped us be successful and that might help you as well!
1. Write down your menu and post it somewhere in your home (we put ours on the refrigerator) or put it in your phone's calendar if that is what you use. From your menu, make a grocery list (it is so helpful if to list your items out according to the layout of the store, produce together, snacks together, etc.). Growing up my mom used to always make a menu and she was so good about sticking to it - now I see why!
2. Designate a workspace - When prepping, you are going to have a lot of different items on the countertop. I like to make sure my workspace is clear, I have a large cutting board, and something to put garbage in like a bowl (plus it makes me feel a bit like Rachel Ray).
3. Be prepared with tupperware - We have an assortment of glass and plastic tupperware in all different sizes. I love using the glass ones for things that we are going to reheat and plastic ones for things we eat cold. We also use plastic bags for small things like muffins or egg bites but I am currently on the hunt for reusable bags, any suggestions?
4. Have a good teammate - If you are prepping by yourself, YOU ARE AMAZING. It is a lot of work from prepping food, making food, packaging food, and of course, the clean up but it is worth it. What helps me be successful is my husband. He may be watching football on Sundays, but somehow he is always there to clean up my messes! We attack Sunday food prep as a team: I cook + prep and he washes dishes. It is the perfect combination. Helpful teammates can include your best friend, your mom, your dad, your aunt, uncle, make it Sunday Funday event and everyone wins!
On to the food, here is our dinner menu this week. You'll notice that we have pre-prepped meals for evenings that we already know we are going to be busy.
Monday: Enchiladas (already prepped)
Tuesday: Leftover Enchiladas
Wednesday: Stir Fry Zoodles + Fried Rice (Trader Joe's has an amazing fresh stir-fry mix, easy!)
Thursday: Spaghetti Squash
Friday: Date Night (This is usually our night to eat out)
*Breakfast: Spicy Egg + Cheese Bites or Peanut Butter Banana Muffins
*Lunches: Protein Pack (slices of salami and two cheese sticks) + Apple or Egg Salad (or any leftovers from dinner)
